Moth beans, called matki or moth, are small brown pulses with an earthy flavour, best known for sprouting into the base of misal and for hearty usal curries. East End supplies them whole as 12x1kg, twelve one-kilogram packs per case, twelve kilograms in total. A dependable dry pulse for kitchens cooking Maharashtrian and Gujarati menus.
For sprouts, soak overnight, drain, then keep covered and moist for a day or two until tails appear. To cook dry, soak for a few hours and boil for around forty-five minutes, or pressure cook for about fifteen minutes, until tender. Use in usal, misal, curries and sprouted salads.
Store in a cool, dry place in a sealed container, safe from damp and pests.
