Moth beans, often called matki, are small brown pulses popular in western Indian cooking. This case is 20 x 500g, meaning twenty separate 500g packs. That mid size pack is handy for a kitchen that gets through pulses steadily but wants to keep unopened stock sealed and fresh. The beans have a mild, nutty taste and hold a firm bite once cooked.
Cooking and uses: rinse well, then soak for about 6 to 8 hours or overnight. For sprouts, drain the soaked beans, tie loosely in a damp cloth and leave in a warm spot for a day or two until small tails appear. To cook, boil soaked beans for roughly 30 to 40 minutes until tender, or pressure cook for less time. They are the base for spicy misal, dry usal and comforting bean curries.
keep dry beans in a cool, dry cupboard in a sealed pack. Once soaked or sprouted, refrigerate and use within a couple of days.
