Vatana, sometimes called white peas or whole dried peas, are firm round peas that cook down into hearty, savoury dishes. Cooking and Uses: Soak overnight for at least 8 hours, then drain and rinse. Boil for 45 to 60 minutes until soft, or pressure cook to save time. Mash lightly for ragda, or keep the peas whole for curries and hearty sides.
Store in a cool, dry cupboard. After opening, keep in a sealed container and use within the date on pack.
