Cooking and Uses: Marinate in spices, yoghurt or a barbecue rub, then roast, grill or fry until the skin is crisp and the meat pulls easily from the bone. They cook well in curries and casseroles, on the barbecue, or oven baked for sharing platters. Score the meat before marinating to help the flavours soak in. Cook until piping hot throughout with no pink meat and juices running clear, aiming for a core temperature of 75C, checking close to the bone.

Storage

Keep chilled at 5C or below and use by the date on the pack, or freeze in portions on the day of delivery. Defrost fully in the fridge before cooking and never refreeze thawed meat.
