These are polished whole brown lentils from East End Foods of Birmingham, often known as sabut masoor. The 1 kg bag is a value size for regular cooks and batch cooking, and because these lentils are polished they are clean and even in appearance. Brown lentils have a mild, earthy flavour and hold a little bite, which makes them one of the most useful pulses to keep in.
Cooking and Uses: Rinse the lentils well in cold water. A short soak helps but is not essential. Simmer in fresh water until tender, usually around 20 to 30 minutes, topping up the water as needed. Use them for whole masoor dal, thick soups, warm salads, curries and hearty vegetable stews. They also cook down well into a softer, comforting dal.
Keep in a cool, dry place and reseal after opening. Cooked lentils keep in the fridge for a few days and freeze well.
