Moth whole from East End Foods are small brown moth beans, sometimes called matki or Turkish gram, sold as a single 1 kg retail pack. These are whole, unsplit beans with an earthy, nutty flavour. A 1 kg bag gives plenty for repeat cooking. As a dry pulse they need soaking and boiling, and they are also popular for sprouting.
Cooking and Uses: Rinse, then soak for several hours or overnight. Drain, add fresh water and boil, then simmer until tender, usually around forty five minutes depending on the age of the beans. To sprout, soak overnight, drain and leave in a covered container, rinsing daily until small shoots appear. Use in curries, salads and the Maharashtrian favourite misal.
Keep cool, dry and out of sunlight. Once opened, use an airtight container and finish within the pack date.
