Urid Dall Washed is black gram that has been split and had its dark skin removed, leaving pale, ivory coloured lentils. Being split and skinned, it softens more readily than whole urid, though it still needs soaking and boiling before use.
Cooking and Uses: Rinse and soak, then boil until soft for a smooth, creamy dal. For South Indian classics, soak and grind the dall into a batter for idli and dosa, or shape and fry it into crisp medu vada. It is also used in some spice pastes and to add body to dishes.
Keep in a cool, dry cupboard in a sealed container away from moisture. Stored dry, it keeps well for months.
