Cooking and Uses: Rinse and soak for several hours or overnight, since whole urid is firmer than split lentils. Boil or pressure cook until soft, then simmer gently with butter, cream, tomato and warming spices for dal makhani. It also combines well with kidney beans in slow cooked dishes.
