The inner fillet, sometimes called the mini fillet or tender, is the slim strip found on the underside of the breast. It is prized for its soft texture and quick cooking time. This 700g pack gives you a good quantity of uniform, boneless strips that need almost no preparation, which makes them a favourite for fast paced kitchens and easy home meals.
Cooking and Uses: Coat in breadcrumbs for goujons, thread onto skewers for grilling, or toss through a quick stir fry. They also work well in curries and fajitas where fast cooking keeps them juicy. Because they are thin, they need only a few minutes over a high heat. Cook until piping hot throughout with no pink meat and juices running clear, aiming for a core temperature of 75C.
Keep chilled at 5C or below and use by the date on the pack, or freeze on the day of delivery. Defrost fully in the fridge before cooking and do not refreeze once thawed.
Food Safety: Keep raw chicken away from ready to eat foods, use separate boards and utensils, and clean hands and surfaces thoroughly afterwards. Do not wash raw chicken, as splashing water spreads bacteria around the kitchen.
