Corn meal is ground maize, and this is the medium grind, which gives a little more texture than a fine flour. Heera supplies it in a 1.5kg retail pack suited to regular home cooking. The pack is listed in the source data as 1.5g, which is a typo for 1.5kg, so treat this as a 1.5kg bag.
Cooking and Uses: Mix with warm water to form a dough for makki di roti, the classic partner to sarson ka saag. The medium grind also suits polenta style porridge, rustic cornbread and a crisp coating for fried foods. Maize meal has a naturally sweet, mellow flavour.
Store in a cool, dry place away from sunlight. After opening, keep it in an airtight container to guard against moisture and to hold its texture.
