Heera Goond Katira offers 100g of gum tragacanth, a natural edible gum that comes as small crystals or flakes. Once soaked in water for several hours it swells into a soft, translucent gel. It is a traditional favourite in warm weather, prized for its cooling reputation and used to add texture to drinks and sweets.
Soak a small amount of the crystals in plenty of water for several hours or overnight until they swell into a gel. Rinse if needed, then stir the softened gum into cold drinks, milk, faluda or dessert mixtures. A little expands considerably, so use sparingly.
Store in a cool, dry place away from direct sunlight. Reseal after use to keep the contents fresh.
