Heera Kalonjee, sometimes called onion seeds or nigella, comes in a 100g pack of tiny jet black seeds with a peppery, faintly oniony aroma. Best known as a topping for breads, they also bring a savoury lift to pickles, tempering and spice blends.
Sprinkle over naan, breads and savoury bakes before baking, temper in hot oil for curries and dals, or add to pickles and chutneys. Toast lightly to deepen the aroma before use.
Store in a cool, dry place away from direct sunlight. Reseal the pack after opening to protect the aroma.
