How to cook: Soak a piece of the pulp in warm water to soften, then squeeze and strain to make a smooth tamarind paste, discarding any seeds or fibres. Stir the paste into curries, sambar, chutneys, marinades and sauces, adjusting to taste for the level of sourness you want.
