Palak paneer is a much loved meat free classic, soft cubes of paneer cheese in a smooth, spiced spinach gravy. This Shan masala provides the measured spicing so the dish comes together without a cupboard full of separate spices. You bring the spinach and paneer, and the masala brings the seasoning.
Blanch and blend fresh spinach, or use prepared spinach. Fry onions, ginger, garlic and tomato in oil, stir in the masala, then add the spinach puree and a little water and simmer. Add the paneer cubes, lightly fried if you like, and warm through. A spoonful of cream or yoghurt softens the finish. Serve with naan, roti or rice. You supply the paneer, which is a fresh cheese.
Store in a cool, dry place away from direct sunlight. Reseal after opening and use within a reasonable period. Check the pack for the best before date.
