Pav bhaji is proper street food comfort, a soft, spiced mash of mixed vegetables cooked down with butter and served with pillowy pav rolls. Boil and mash potatoes and mixed vegetables such as peas, cauliflower and carrot. In butter, fry onions, tomatoes, ginger and garlic, stir in the masala, then add the mashed veg and a little water and cook it down to a soft, thick bhaji, mashing as you go. Finish with butter, lemon and coriander. Serve with pav rolls toasted in butter, plus chopped onion on the side.
