The retained skin adds a little extra texture and an earthy character compared with fully skinned dal, making it a satisfying base for everyday cooking.
Simmer into classic mung dal, add body to soups and stews, or use in khichdi and mixed lentil dishes. Rinse before cooking and simmer until tender; there is no need to soak for long, though a short soak can shorten the cooking time.
Store in a cool, dry place in a sealed container away from moisture. Kept dry, the pulses will last well within the date shown on the packaging.
